Ingredients for Peanut Tikoy Rolls
- 3 cups glutinous rice flour
- 1 1/2 cups sugar
- 1 1/2 cups water
- 2 teaspoons vanilla extract
- 1/3 cup sweet chunky peanut butter
- 1 1/2 cups ground roasted peanuts
- Coconut oil
How to cook Peanut Tikoy Rolls
- 1.Mix glutinous rice flour, sugar, water, and vanilla until lump-free.
- 2.Grease an 8-inch square pan with coconut oil, pour in batter, and steam 15–18 minutes until a toothpick comes out clean.
- 3.Cool 5 minutes, then turn the tikoy onto a coconut-oil-greased mat.
- 4.Pipe peanut butter near one edge, roll tightly to enclose it, seal, and cut off the roll; repeat with remaining tikoy.
- 5.Cut rolls into pieces and coat every side with ground roasted peanuts.
