Ingredients for Filipino Spaghetti
1 kg spaghetti noodles
500 g minced beef
500 g minced pork
200 g hotdogs or frankfurters, sliced
2 tablespoons tomato paste
1 large bottle sweet-style tomato ketchup or banana ketchup
400 g tomato puree or tomato sauce
2 cups beef stock
2 tablespoons flour
1 teaspoon rubbed sweet basil
5 cloves garlic, minced
1 big white onion, finely chopped
Quickmelt cheese or Colby, grated, for topping
Freshly ground black pepper, to taste
Sugar, to taste
Salt, to taste
Oil, for sauteing
How to cook Filipino Spaghetti
1.Cook the spaghetti noodles in salted boiling water according to the package directions, then drain and set aside.
2.Heat oil in a heavy pan over medium heat and saute the garlic and onion until fragrant and softened.
3.Add the minced beef and minced pork, breaking them up as they cook, and continue cooking until the meat turns light brown.
4.In a bowl, whisk the flour into the beef stock until smooth, then pour it into the pan with the ketchup, tomato puree or sauce, sliced hotdogs, tomato paste, and basil.
5.Stir well, bring to a simmer, and cook for 20 minutes over medium-low heat, adding a splash of water if the sauce becomes too thick.
6.Season with black pepper, salt, and enough sugar to make the sauce distinctly sweet, then simmer for 5 minutes more.
7.Serve the noodles with the sauce spooned over the top and finish with grated cheese.
