Pork Adobo with Tofu

Pork adobo with tofu adds fried tofu cubes to a soy-vinegar pork stew enriched with oyster sauce and a touch of sugar.

Ingredients for Pork Adobo with Tofu

  • 1 lb pork, cubed
  • 14 ounces tofu, cubed and deep-fried
  • 2 tablespoons oyster sauce
  • 4 dried bay leaves
  • 5 cloves garlic, crushed
  • 6 tablespoons soy sauce
  • 4 tablespoons vinegar
  • 1 cup water
  • 2 teaspoons sugar
  • 2 tablespoons cooking oil
  • Salt, to taste
  • Pepper, to taste

How to cook Pork Adobo with Tofu

  1. 1.Heat the cooking oil in a pot over medium heat. Saute the crushed garlic until it turns light brown.
  2. 2.Add the cubed pork and cook for 3 to 5 minutes, stirring occasionally, until lightly browned.
  3. 3.Pour in the soy sauce, oyster sauce, and water. Add the bay leaves, bring to a boil, then lower the heat and simmer for about 45 minutes, or until the pork is tender.
  4. 4.Add the vinegar and let the liquid boil again before stirring so the sharpness cooks off cleanly.
  5. 5.Stir in the sugar and deep-fried tofu, then cook for 3 minutes so the tofu absorbs some of the sauce.
  6. 6.Season with salt and pepper to taste, turn off the heat, and transfer to a serving bowl.
