Nilagang Baka with Kalabasa – Filipino boiled beef Soup

Ingredients for Nilagang Baka with Kalabasa – Filipino boiled beef Soup
- 2 lb beef chuck (paypay), cubed
- 1/2 medium butternut squash or calabaza squash, cubed
- 1 bunch bok choy (pechay)
- 20 to 30 long green beans
- 2 medium yellow onions, cut into wedges
- 2 tsp whole peppercorns
- 3 cups beef broth
- 3 cups water
- 3 tbsp fish sauce (patis)
How to cook Nilagang Baka with Kalabasa – Filipino boiled beef Soup
- 1.Bring the water and beef broth to a boil in a covered pot.
- 2.Add beef, onions, and peppercorns; simmer over low-medium heat for 1 1/2 to 2 hours, until beef is tender.
- 3.Add kalabasa and cook for 5 minutes.
- 4.Add long beans and cook for 3 minutes.
- 5.Stir in pechay and patis; cook for 1 minute, then serve hot with rice.
