Lechon Sauce
Lechon Sauce is a sweet-tangy, liver-based Filipino condiment for roasted meats.

Ingredients for Lechon Sauce
- 1/2 lb pork liver
- 3/4 cup white vinegar
- 1/4 cup breadcrumbs
- 8 garlic cloves, minced
- 2 onions, minced
- 1 1/2 cups water
- 3/4 cup brown sugar
- 1 teaspoon onion powder
- 3 tablespoons cooking oil
- Salt, to taste
- Ground black pepper, to taste
How to cook Lechon Sauce
- 1.Season pork liver with salt and pepper; rest for 5 minutes, then grill until fully cooked. Cool and chop.
- 2.Heat oil in a wok over medium heat. Sauté garlic and onions until softened.
- 3.Add liver and cook for 1 minute. Pour in vinegar and bring to a boil.
- 4.Stir in brown sugar and water; bring back to a boil, then add breadcrumbs and simmer for 2 minutes.
- 5.Blend the mixture until smooth, return it to the wok, and bring it just to a boil.
- 6.Season with onion powder, salt, and pepper. Cool slightly and serve as a condiment.
