Lugaw
This simple Lugaw is a warming ginger rice porridge with classic toppings.

Ingredients for Lugaw
- 1 cup glutinous rice
- 2 tablespoons oil
- 3 garlic cloves, minced
- 1 medium onion, chopped
- 1/4 cup ginger, julienned
- 6 to 8 cups water
- 3 tablespoons fish sauce
- 1/8 teaspoon white ground pepper
- 1/4 teaspoon safflower (kasubha), optional
- Hard-boiled egg, for serving
- Green onion, for serving
- Toasted garlic, for serving
- Ground pepper, for serving
How to cook Lugaw
- 1.Rinse the glutinous rice twice and drain thoroughly.
- 2.Heat oil over medium heat in a pot. Sauté onion, garlic, and ginger until limp and aromatic.
- 3.Add rice, water, fish sauce, white pepper, and optional kasubha. Bring to a boil, stirring regularly.
- 4.Reduce heat and cook until rice is expanded and fully tender, adding water as needed for your preferred consistency.
- 5.Ladle into bowls and top with hard-boiled egg, green onion, toasted garlic, and ground pepper.
