Adobong Sili with Pork and Tinapa
Adobong Sili with Pork and Tinapa combines crisp pork, smoky fish, and green chilies in adobo sauce.

Ingredients for Adobong Sili with Pork and Tinapa
- 600 grams pork belly, cut into bite-sized pieces
- 200 grams boneless tinapa, cut into bite-sized pieces
- 10 large green chilies, sliced
- 1 whole garlic, minced
- 1/3 cup cane vinegar
- 1/3 cup Filipino soy sauce
- 1 tablespoon sugar
- 1 teaspoon cornstarch
- 4 bay leaves
- 1 tablespoon black peppercorns
- Water, as needed
- Oil, for cooking
How to cook Adobong Sili with Pork and Tinapa
- 1.Sauté garlic in oil until golden brown, then remove and set aside.
- 2.Fry pork belly until browned; add enough water, vinegar, soy sauce, peppercorns, bay leaves, and sugar.
- 3.Simmer about 45 minutes until pork is tender, then drain and reserve the cooking liquid.
- 4.Heat fresh oil in a wok and fry pork until crisp at the edges; add green chilies and cook 5 minutes.
- 5.Add tinapa, mix gently, then stir cornstarch into reserved liquid and pour it into the wok.
- 6.Simmer 5 minutes until the sauce thickens, top with fried garlic, and serve hot.
