Pinayti
Pinayti is a concentrated coconut-and-shrimp dish cooked until its flavorful oil separates.

Ingredients for Pinayti
- 350 g fresh or frozen micro shrimps, cleaned
- 2 cups coconut cream
- 1 1/2 cups coconut milk
- 4 garlic cloves, minced
- 2 shallots, minced
- 1 tbsp vinegar
- Freshly ground black pepper, to taste
- Salt, to taste
- Cooking oil
- 1/4 cup water
How to cook Pinayti
- 1.Cook micro shrimps with water and a pinch of salt over medium heat for about 8 minutes, until cooked and the water evaporates.
- 2.Pound the cooked shrimps in a mortar and pestle until pasty.
- 3.Heat oil in the same pan, sauté garlic and shallots until fragrant, then stir in the pounded shrimp for 3 minutes.
- 4.Add vinegar and cook 2 minutes. Season with salt and pepper, then stir in coconut milk and bring to a gentle boil.
- 5.Reduce heat, simmer 10 minutes, add coconut cream, and simmer about 20 minutes until nearly dry and oil separates.
