Pinamalhan Na Bangus
Pinamalhan na bangus is tangy milkfish braised with vinegar, ginger, and aromatics.

Ingredients for Pinamalhan Na Bangus
- 2 milkfish, cleaned and cut into 1 1/2-inch pieces
- 3/4 cup cane vinegar
- 2 tbsp soy sauce
- 1 thumb-sized ginger, thinly sliced
- 3 shallots, thinly sliced
- 1 whole garlic, pounded
- 3 green chilies
- 2 tbsp olive oil
- 2 tsp black peppercorns
- Salt, to taste
How to cook Pinamalhan Na Bangus
- 1.Layer garlic, shallots, and ginger in a pot. Arrange milkfish over them, then add green chilies.
- 2.Pour in cane vinegar and soy sauce. Scatter black peppercorns and season with salt.
- 3.Cover and bring to a rapid boil over high heat. Lower to medium-high and cook about 15 minutes, until nearly dry but saucy.
- 4.Drizzle olive oil over the fish and serve.
