Filipino Style Liver Spread
This Filipino-style liver spread is a rustic, bacon-rich pâté with a gentle chili warmth.

Ingredients for Filipino Style Liver Spread
- 250 g liver, cubed
- 100 g bacon, chopped
- 1 cup plus 3 tablespoons full-fat fresh milk
- 50 g butter
- 1 small shallot, minced
- 1 clove garlic, minced
- 1 bird's eye chili
- Sea salt
- Freshly ground black pepper
- Oil
How to cook Filipino Style Liver Spread
- 1.Cover liver with 1 cup milk and refrigerate at least 1 day. Drain and pat dry before cooking.
- 2.Heat a little oil in a pan and fry bacon until crisp. Remove bacon, leaving rendered fat in the pan.
- 3.Fry liver in the same pan until well cooked and browned on all sides. Remove.
- 4.Cook garlic and shallot in the pan over low heat for 2 minutes. Turn off heat, add butter and liver, and cool.
- 5.Process liver, bacon, rendered fat, butter, pan bits, chili, salt, and pepper to a slightly textured paste.
- 6.Blend in remaining milk 1 tablespoon at a time until spreadable.
