Pata Paksiw
Pata Paksiw slowly braises pork hock in soy, vinegar, sugar, and aromatic spices.

Ingredients for Pata Paksiw
- 2 lbs pork hock (pata), sliced crosswise
- 1 tsp crushed garlic
- ½ cup soy sauce
- 2 cups water
- 3 tbsp vinegar
- ½ cup brown sugar
- 100 g dried banana blossoms, soaked in water
- 5 dried bay leaves
- 1 tbsp whole peppercorns
- Salt, to taste
How to cook Pata Paksiw
- 1.Boil pork hock in 6 cups water for 15 minutes. Discard the water and rinse pork thoroughly under running water.
- 2.Bring 2 cups water to a boil with peppercorns and bay leaves. Add soy sauce and garlic.
- 3.Add pork hock and simmer 1–1½ hours until tender, or pressure-cook 30 minutes.
- 4.Add vinegar and simmer 10 minutes. Add soaked banana blossoms and simmer 5–7 minutes.
- 5.Stir in brown sugar and salt, simmer 2 minutes, and serve hot.
