Crawfish in Coconut Milk with Spinach

Ingredients for Crawfish in Coconut Milk with Spinach
- 3 lb steamed crawfish
- 4 cups coconut milk
- 5 long green chilies
- 3 cups fresh spinach
- 3 tbsp shrimp paste
- 1 medium onion, minced
- 3 garlic cloves, crushed and chopped
- 1/8 tsp ground black or white pepper
- 3 tbsp cooking oil
How to cook Crawfish in Coconut Milk with Spinach
- 1.Heat oil in a pot and sauté onion and garlic until onion is translucent.
- 2.Add shrimp paste and cook, stirring, for 30 seconds.
- 3.Pour in coconut milk, bring to a boil, then cover and cook over medium heat until reduced by half.
- 4.Add chilies and crawfish. Cook 5 minutes, stirring every minute.
- 5.Add spinach and pepper; cook 2 minutes just until spinach wilts. Serve with warm rice.
