Ginataang Santol (Sinantolan)
Ginataang Santol, or Sinantolan, is a rich coconut dish balanced by savory shrimp paste and chilies.

Ingredients for Ginataang Santol (Sinantolan)
- 4 santol, peeled and seeds removed
- 1/4 lb ground pork
- 3 cups coconut cream
- 2 long green peppers (siling pansigang), sliced crosswise
- 5 Thai chilies (siling labuyo)
- 3 tbsp shrimp paste
- 1 medium red onion, minced
- 3 cloves garlic, crushed
- 3 tbsp cooking oil
How to cook Ginataang Santol (Sinantolan)
- 1.Finely mince santol in a food processor or by hand. Wrap in cheesecloth and squeeze out the liquid.
- 2.Heat oil in a pan; sauté garlic and onion until translucent. Add pork and cook until lightly browned.
- 3.Add squeezed santol and cook 3 to 5 minutes.
- 4.Pour in coconut cream; bring to a boil, stir, cover, and cook over medium heat until reduced by half.
- 5.Stir in shrimp paste, siling pansigang, and siling labuyo. Cook until the liquid evaporates, then serve.
