Menudo with Raisins and Green Peas
Menudo with Raisins and Green Peas is a tomato-braised pork stew with liver, hotdogs, and sweet accents.

Ingredients for Menudo with Raisins and Green Peas
- 2 lb pork, cubed
- 1/2 lb pig's liver, cubed
- 3 hotdogs, sliced diagonally
- 2 potatoes, peeled and cubed
- 2 carrots, peeled and cubed
- 2 yellow onions, chopped and divided
- 5 cloves garlic, chopped and divided
- 1/2 cup raisins
- 3/4 cup frozen green peas
- 3 dried bay leaves
- 15 oz tomato sauce
- 1/4 cup soy sauce
- 1 1/2 cups water
- 5 tbsp cooking oil, divided
- 8 g Maggi Magic Sarap
- Fish sauce, to taste
- Ground black pepper, to taste
How to cook Menudo with Raisins and Green Peas
- 1.Mix pork with soy sauce and half the garlic; marinate 10 minutes.
- 2.Heat 2 tablespoons oil. Sauté hotdogs for 1 minute and set aside; soften half the onion, sauté liver for 2 minutes, then set liver aside.
- 3.Heat remaining oil in a pot. Brown remaining garlic, soften remaining onion, then cook marinated pork for 3 minutes.
- 4.Add tomato sauce and water, cover, and bring to a boil. Add bay leaves and raisins; simmer until pork is tender.
- 5.Return liver and hotdogs. Add carrots and potatoes, cover and cook 8 minutes; add peas and Maggi Magic Sarap for 3 minutes, then season and serve.
