Fish Kardilyo
Fish Kardilyo features cornmeal-crusted tilapia topped with a quick tomato-and-egg sauce.

Ingredients for Fish Kardilyo
- 4 tilapia fillets
- 1/4 cup all-purpose flour
- 3/4 cup cornmeal
- 2 eggs, beaten
- 2 medium tomatoes, diced
- 1 medium yellow onion, diced
- 3 cloves garlic, crushed
- 3 tbsp scallions, chopped
- 1 to 1 1/2 tbsp fish sauce
- 1 1/2 tsp salt
- 1/2 tsp ground black pepper
- 3/4 cup water
- 1 cup cooking oil
How to cook Fish Kardilyo
- 1.Rub tilapia with salt and pepper, then let stand for 10 minutes. Heat oil in a frying pan.
- 2.Dredge fish in flour, dip in some beaten egg, and coat with cornmeal. Fry until light golden brown on both sides; set aside.
- 3.Sauté garlic, onion, and tomatoes until softened. Add fish sauce and pepper, then pour in water and bring to a boil.
- 4.Simmer 3 to 5 minutes. Stir in the remaining beaten egg for 5 seconds, then spoon sauce over fried fish and garnish with scallions.
