Sopas ala Pobre
Sopas ala Pobre is a deeply simmered beef-bone soup finished with misua and malunggay.

Ingredients for Sopas ala Pobre
- 2 kg meaty beef leg bones, cut into small sections
- 150 g misua noodles
- 1 cup malunggay leaves
- 1 litre beef stock
- Water, as needed
- 1/2 thumb-sized fresh turmeric, sliced, optional
- 6 cloves garlic, minced
- 2 onions, sliced
- Fish sauce, to taste
- Salt, to taste
- Freshly ground black pepper, to taste
- Oil
How to cook Sopas ala Pobre
- 1.Heat oil in a pot and sauté garlic, onions, and optional turmeric until fragrant.
- 2.Add beef bones and salt. Pour in beef stock, then add enough water to cover the bones.
- 3.Bring to a boil, reduce to low heat, and simmer about 2 1/2 hours until the broth is rich.
- 4.Add misua and malunggay, season with fish sauce and pepper, and simmer 10 minutes until noodles are tender.
- 5.Serve hot.
