Beef Asado
This savory-sweet Beef Asado pairs tender beef with olives, potatoes, and peppers.

Ingredients for Beef Asado
- 1 onion, diced
- 2 cloves garlic, crushed
- 1 beef chuck roast (4 lb), quartered
- Salt and pepper, to taste
- 2 tbsp cooking oil
- 2 large tomatoes, chopped
- 1 tbsp whole peppercorns, crushed
- 1 jar pitted Manzanilla olives (5 oz), with juice
- 1 onion, quartered
- 2 bay leaves
- 2 beef bouillon cubes
- 1/2 cup ketchup
- 1 large red bell pepper, sliced
- 4 small potatoes, peeled and quartered
- 1 tbsp corn flour, optional
- 1 tbsp water, optional
How to cook Beef Asado
- 1.Season beef with salt and pepper. Sauté diced onion and garlic in oil over medium heat for about 5 minutes; transfer to a 6-quart pot.
- 2.Brown beef pieces on all sides, then add them to the pot with tomatoes, peppercorns, olives and juice, quartered onion, bay leaves, and bouillon.
- 3.Bring to a boil, stir in ketchup, reduce to medium-low, and simmer for 1 hour.
- 4.Remove beef, add bell pepper to the sauce, and simmer 30 minutes. Meanwhile, fry potatoes until golden and add them to the pot.
- 5.Slice beef against the grain, return it to the sauce, and cook 5 minutes. Thicken with corn flour mixed with water if needed.
