Beef Chop Suey
Beef Chop Suey combines quickly seared tenderloin with colorful vegetables in a glossy savory sauce.

Ingredients for Beef Chop Suey
- 300 g beef tenderloin, thinly sliced
- 1/2 tsp baking powder
- 2 tbsp Chinese cooking wine
- 1 tbsp soy sauce
- 2 tsp sesame oil
- 1 tbsp cornstarch
- Salt, to taste
- Freshly ground black pepper, to taste
- 1/3 head cabbage, chopped
- 1/2 head cauliflower, cut into florets
- 1 large carrot, thinly sliced
- 2 celery stalks, sliced
- 1 bunch garlic sprouts, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 1/2 cups sliced mushrooms
- 3 tsp cornstarch dissolved in 1/4 cup water
- 3/4 cup beef stock
- 1 tbsp sugar
- 4 cloves garlic, minced
- 1 onion, chopped
- Fish sauce, to taste
- Oil, for cooking
How to cook Beef Chop Suey
- 1.Combine beef with baking powder, cooking wine, soy sauce, sesame oil, cornstarch, salt, and pepper; marinate for 30 minutes.
- 2.Heat a wok until very hot. Sear beef in oil in a single layer for 1 minute per side; work in batches and set aside.
- 3.Lower heat to medium and sauté garlic and onion. Raise heat, then stir-fry cabbage, celery, garlic sprouts, and cauliflower for 2 minutes.
- 4.Add mushrooms, carrot, and both bell peppers; stir-fry 2 minutes. Return beef and cook 1 minute.
- 5.Add beef stock and cornstarch slurry; bring to a rapid boil until thick. Season with sugar, fish sauce, and pepper.
