Pinaryahang Isda
Crisp snapper is gently simmered with ampalaya in a light, aromatic broth.

Ingredients for Pinaryahang Isda
- 2 whole snappers, scored
- 1 large bitter gourd, sliced
- 1 large tomato, chopped
- 1 red onion, chopped
- 6 cloves garlic, minced
- 1 thumb-sized ginger, cut into thin matchsticks
- 1 1/2 cups water
- Salt
- Fish sauce, to taste
- Freshly ground black pepper
- Oil, for frying
How to cook Pinaryahang Isda
- 1.Season snapper generously with salt and black pepper. Deep-fry in hot oil until golden and crisp; drain.
- 2.Heat a little oil in a pot over medium heat. Sauté garlic, ginger, and onion until fragrant and translucent.
- 3.Add tomato and cook until softened. Pour in water and bring to a boil.
- 4.Add bitter gourd and simmer about 5 minutes, until it begins to soften.
- 5.Nestle in the fried snapper, season with fish sauce and pepper, and simmer 5–7 minutes. Serve hot with rice.
