Sapin-Sapin
Sapin-Sapin is a colorful steamed rice cake with ube, langka, and macapuno layers.

Ingredients for Sapin-Sapin
- 500 g glutinous rice flour
- 1½ cups sugar
- ½ can (400 g) condensed milk
- 2 cans (400 ml each) coconut milk
- 1 can (200 ml) coconut cream
- ⅓ cup freshly grated ube
- ½ packed cup fresh ripe jackfruit flesh
- ⅓ cup macapuno, drained and finely chopped
- 1 cup desiccated coconut
- Ube flavocol, as needed
- Yellow food coloring, as needed
How to cook Sapin-Sapin
- 1.Mix glutinous rice flour, sugar, condensed milk, coconut milk, and coconut cream until smooth. Divide evenly among three bowls.
- 2.Blend grated ube with ube flavocol into one portion; blend jackfruit and yellow coloring into another; blend macapuno into the last.
- 3.Pour the ube mixture into a greased, cling-wrap-lined pan. Steam 15–20 minutes until set, then steam the jackfruit layer for another 15–20 minutes.
- 4.Add the macapuno layer and steam 30 minutes, until fully set. Cool completely before slicing.
- 5.Toast desiccated coconut in a dry pan over low heat until golden. Sprinkle over the Sapin-Sapin before serving.
