Filipino Spanish Bread
Filipino Spanish Bread is a soft, breadcrumb-coated roll with a buttery sweet crumb filling.

Ingredients for Filipino Spanish Bread
- 3 cups all-purpose flour
- 1 1/2 tsp instant yeast
- 1/4 cup white sugar
- 1 tsp salt
- 3/4 to 1 cup lukewarm milk
- 3 tbsp butter or margarine, melted
- 1 egg, beaten
- 1/4 cup butter
- 1/2 cup bread crumbs
- 2 tsp flour
- 1/8 cup water or milk, plus more if needed
- 1/2 cup brown or white sugar
- 1/8 tsp salt
- Butter, for brushing
- 2 tbsp milk or water
- 1/2 cup bread crumbs, for coating
How to cook Filipino Spanish Bread
- 1.Mix flour, sugar, salt, lukewarm milk, melted butter, egg, and yeast into a slightly sticky dough. Knead on an oiled surface 10 to 12 minutes.
- 2.Place dough in an oiled bowl, cover, and let rise in a warm place until doubled, about 30 to 60 minutes.
- 3.For filling, cook butter, 1/4 cup crumbs, flour, water or milk, sugar, salt, and remaining filling crumbs over medium-low heat until paste-like.
- 4.Divide dough into 16. Roll each into a long triangle, brush with butter, spread filling with a 1 cm border, and roll from wide end.
- 5.Brush rolls with milk or water, coat in crumbs, place seam-side down on lined trays, and rise covered 20 to 30 minutes.
- 6.Bake at 150°C on the middle rack for 20 minutes, until set and lightly golden. Serve warm.
