Ginataang Monggo with Tofu and Malunggay
Ginataang Monggo with Tofu and Malunggay is a creamy coconut mung bean stew with tender greens.

Ingredients for Ginataang Monggo with Tofu and Malunggay
- 3 tablespoons cooking oil
- 5 cloves garlic, crushed
- 1 onion, chopped
- 1 tomato, diced (optional)
- 8 ounces mung beans
- 6 cups water, plus more as needed
- 1 Knorr Pork Cube
- 40 g Knorr Ginataang Gulay Mix
- 1½ cups water, for diluting the mix
- 8 ounces fried tofu, diced
- 1 cup malunggay leaves
- Salt, to taste
- Ground black pepper, to taste
How to cook Ginataang Monggo with Tofu and Malunggay
- 1.Heat oil and sauté garlic, onion, and optional tomato until softened. Add mung beans and sauté for 2 minutes.
- 2.Pour in 6 cups water and bring to a boil. Add Knorr Pork Cube and cook until mung beans are mushy, adding water if needed.
- 3.Dissolve Knorr Ginataang Gulay Mix in 1½ cups water, then stir it into the pot.
- 4.Add fried tofu and cook for 2 minutes.
- 5.Add malunggay, season with salt and pepper, and serve once the leaves wilt.
