Manyaman Beef Asado
Manyaman Beef Asado is a deeply savory tomato-braised beef dish with potatoes and mushrooms.

Ingredients for Manyaman Beef Asado
- 1 kg marbled chuck steak, whole or in large pieces
- 2 large potatoes, cubed
- 200 g fresh white button mushrooms
- 1 can (400 g) chopped tomatoes
- 2 tbsp tomato paste
- 3 cups beef stock
- 1/4 cup soy sauce
- 1 tbsp cane vinegar
- Juice of 1/2 lemon
- 4 bay leaves
- 2 tsp brown sugar
- 3 star anise
- 1 white onion, chopped
- 6 cloves garlic, minced
- 1/4 cup butter
- Freshly ground black pepper
- Salt
- Oil
How to cook Manyaman Beef Asado
- 1.Season steak with salt and pepper. Grill over high heat for 4 minutes per side; rest 5 minutes, then cube, reserving juices.
- 2.Heat oil in a wok; sauté garlic and onion. Add tomato paste and cook over medium heat for 1 minute.
- 3.Add beef and juices, stock, tomatoes, soy sauce, vinegar, bay leaves, sugar, and star anise. Simmer gently for 1 hour.
- 4.Add mushrooms and cook 45 minutes, adding water if needed. Add potatoes and butter; cook 15 minutes until potatoes are tender.
- 5.Raise heat to reduce sauce until thick. Season, stir in lemon juice, and serve with rice.
