Tinolang Manok sa Upo

Tinolang Manok sa Upo is a gingered chicken soup with tender upo and fresh leafy greens.

Ingredients for Tinolang Manok sa Upo

  • 1 1/2 pounds chicken, cut into serving pieces
  • 1 Knorr Chicken Cube
  • 1 small upo, peeled and cut into large chunks
  • 3/4 cup hot pepper leaves
  • 3/4 cup malunggay leaves
  • 2 thumbs ginger, cut into thin strips
  • 2 long green chili peppers (siling pansigang)
  • 1 medium yellow onion, minced
  • 3 cloves garlic, minced
  • 3 tablespoons fish sauce
  • 1/4 teaspoon ground black pepper
  • 8 cups rice washing, or water
  • 3 tablespoons cooking oil

How to cook Tinolang Manok sa Upo

  1. 1.Heat oil in a pot over medium heat and sauté garlic and onion until aromatic.
  2. 2.Add chicken and cook until lightly browned on every side. Add ginger and cook 1 minute.
  3. 3.Pour in rice washing or water, bring to a boil, and stir in the Knorr Chicken Cube.
  4. 4.Cover and cook over medium heat for 25 to 30 minutes, adding water if needed.
  5. 5.Add upo and siling pansigang, cover, and cook 5 to 7 minutes until upo is tender.
  6. 6.Stir in hot pepper leaves and malunggay; season with fish sauce and black pepper, then serve.
