Pasig Style Nilagang Pata
Pasig Style Nilagang Pata is a golden pork-hock soup with sweet potatoes, saba, cabbage, and string beans.

Ingredients for Pasig Style Nilagang Pata
- 1 1/2 kg pork hock, cut into sections
- 3 saba bananas, sliced on an angle
- 4 medium sweet potatoes, quartered
- 1 tbsp annatto powder, diluted in 1/4 cup water
- 6 cups chicken stock or water
- 1/3 head cabbage, sliced
- 1 bunch string beans, cut into sections
- 2 medium white onions, roughly chopped
- 6 cloves garlic, minced
- Fish sauce, to taste
- Salt, to taste
- Freshly ground black pepper, to taste
- Oil, for cooking
How to cook Pasig Style Nilagang Pata
- 1.Heat oil in a soup pot over medium heat. Sauté garlic and onion until fragrant.
- 2.Season pork hock generously with salt. Add it and brown lightly on all sides until no longer pink.
- 3.Add chicken stock, diluted annatto, and one sweet potato. Add water to cover, bring to a boil, then simmer on low for 1 hour 15 minutes.
- 4.Meanwhile, pan-fry saba in a little oil until lightly browned; set aside.
- 5.Add remaining sweet potatoes and simmer 5 minutes. Add string beans and fried saba; simmer 5 minutes.
- 6.Add cabbage and simmer 3 minutes. Season with fish sauce and black pepper, then serve.
