Kalamay sa Latik
Kalamay sa Latik pairs tender steamed rice cakes with palm-sugar syrup and toasted coconut curds.

Ingredients for Kalamay sa Latik
- 500 g glutinous rice flour
- 1/3 cup white sugar
- 2 1/2 cups water
- Coconut oil, for greasing and serving
- 3 cups water
- 1 1/2 cups palm sugar or brown sugar
- 2 x 400 ml cans coconut cream
How to cook Kalamay sa Latik
- 1.Mix glutinous rice flour, white sugar, and 2 1/2 cups water until smooth; pour into a coconut-oil-greased heatproof container.
- 2.Steam for 25 minutes, until set and cooked through; cool slightly and cut into squares using an oiled knife.
- 3.Boil 3 cups water with palm sugar for 10 minutes, until dissolved and slightly reduced to a pourable syrup.
- 4.Cook coconut cream in a nonstick pan, stirring occasionally, until curds form and oil separates; lower heat until curds turn light brown.
- 5.Drain the latik, then serve kalamay squares in syrup topped with toasted curds and a little coconut oil.
