Ensaymada (Using Potatoes or Sweet Potatoes)
Sweet potato Ensaymada is a soft, buttery Filipino bread finished with sugar and Edam cheese.

Ingredients for Ensaymada (Using Potatoes or Sweet Potatoes)
- 2 1/2 cups bread flour
- 1/3 cup mashed sweet potato
- 1/3 cup sugar
- 2 1/4 tsp rapid-rise yeast
- 1/2 tbsp salt
- 1/4 cup milk
- 1/4 cup cream
- 1/4 cup water
- 1/3 cup shortening
- 1 egg
- 2 egg yolks
- Melted butter
- Grated Edam cheese
How to cook Ensaymada (Using Potatoes or Sweet Potatoes)
- 1.Warm milk, cream, water, and shortening in a saucepan until very warm but not hot.
- 2.Mix 1/2 cup flour, sugar, yeast, and salt. Gradually add the warm liquid, then beat at medium speed for 2 minutes.
- 3.Beat in mashed sweet potato, egg, and 1/2 cup flour at high speed for 2 minutes. Gradually beat in remaining flour.
- 4.Cover and refrigerate dough for 2 hours. Beat in egg yolks on low, cover, and refrigerate at least 4 hours.
- 5.Shape chilled dough into ropes, coil in greased pans, brush with melted butter, and let rise in a warm place until doubled, 1 to 2 hours.
- 6.Bake at 180°C for 15 minutes. Cool on a rack, brush with butter, then top with sugar and Edam cheese.
