Filipino Style Beef Curry
This Filipino Style Beef Curry is a mellow coconut braise with tender beef and sweet vegetables.

Ingredients for Filipino Style Beef Curry
- 1 kg beef brisket, 20% fat
- 2 sweet potatoes, cubed
- 2 carrots, sliced
- 2 cups beef stock
- 400 ml coconut milk
- 200 ml coconut cream
- 3 tbsp curry powder
- 1 tsp sugar
- 2 white onions, roughly chopped
- 6 cloves garlic, minced
- 1 tbsp ginger paste
- Freshly ground black pepper, to taste
- Salt, to taste
- Cooking oil
- Cooked jasmine rice, for serving
How to cook Filipino Style Beef Curry
- 1.Season beef with salt and pepper. Brown it on all sides in oil in a heavy pot, then remove it.
- 2.Sauté onions until soft, then garlic and ginger paste for 1 minute. Add curry powder, beef, stock, and coconut milk; bring to a boil.
- 3.Simmer on low for 1 hour, adding water if needed. Add carrots and simmer about 45 minutes, until beef is tender.
- 4.Add sweet potatoes and simmer 5 minutes. Stir in coconut cream, boil over high heat, then simmer 5 minutes; add sugar and adjust seasoning.
- 5.Serve hot with jasmine rice.
