Black Kutsinta
Black Kutsinta is a chewy steamed rice cake with dulce de leche and toasted coconut.

Ingredients for Black Kutsinta
- 1 cup tapioca starch
- 1 cup all-purpose flour
- ¾ cup dark brown sugar
- 2 tablespoons blackstrap molasses
- 2 teaspoons lye water
- 2 cups water
- Oil spray, for greasing molds
- 1 can (400 g) condensed milk
- 1½ cups desiccated coconut
How to cook Black Kutsinta
- 1.Grease 24 puto or kutsinta molds. Whisk tapioca starch, flour, brown sugar, molasses, lye water, and water smooth.
- 2.Fill molds and steam over medium heat for 15 minutes, covering the steamer lid with a clean cloth. Cool completely.
- 3.For dulce de leche, keep the condensed-milk can unopened, cover with water, boil, then simmer 1 hour. Cool before opening.
- 4.Toast coconut in a dry nonstick pan over medium-low heat, stirring often, until golden. Unmold kutsinta and top with dulce de leche and coconut.
