Tiyula Itum
Tiyula Itum is a deeply aromatic beef soup colored by charred coconut.

Ingredients for Tiyula Itum
- 1 kg beef brisket, cubed
- ½ cup grated coconut meat
- 4 lemongrass stalks, white parts only, pounded
- 3 bird's eye chillies, finely chopped
- 4 cups beef stock
- 1 thumb-sized ginger, thinly sliced
- ½ thumb-sized turmeric, thinly sliced
- 6 cloves garlic, minced
- 3 shallots, thinly sliced
- Salt, to taste
- Freshly ground black pepper, to taste
- Oil
How to cook Tiyula Itum
- 1.Grill coconut on a foil-lined tray at the oven's highest setting until blackened; cool, then process into a powder.
- 2.Season beef with salt and black pepper. Brown in batches in hot oil, then set aside.
- 3.Sauté garlic, shallots, ginger, turmeric, chillies, and burnt coconut powder in the same pot.
- 4.Return beef with lemongrass and stock. Bring to a boil, then simmer over low heat for 1½ hours until tender.
- 5.Adjust salt and black pepper, then serve.
