Beef Short Rib Kare Kare
Beef Short Rib Kare Kare is a rich peanut stew finished with crisp-tender vegetables and sautéed shrimp paste.

Ingredients for Beef Short Rib Kare Kare
- 2 1/2 lb beef short ribs
- 10 snake beans, cut into 2-inch lengths
- 1 bunch baby bok choy
- 1 1/4 cups ground peanuts
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 small banana blossom, sliced
- 1 tbsp glutinous rice flour mixed with 1/4 cup water
- 3/4 cup annatto water
- 1 1/2 cups water
- 3 tbsp cooking oil
- 1/2 cup sautéed shrimp paste
How to cook Beef Short Rib Kare Kare
- 1.Heat oil in a pressure cooker over medium heat. Sauté garlic and onion until fragrant, then stir in ground peanuts for 3 minutes.
- 2.Add short ribs and cook until lightly browned. Pour in annatto water and water, then bring to a boil.
- 3.Lock the lid and pressure-cook for 30 minutes. Release pressure safely before opening.
- 4.Add banana blossom and cook for 5 minutes. Stir in the glutinous rice flour slurry until the sauce thickens.
- 5.Add snake beans and baby bok choy; cook 5 minutes until tender. Serve with sautéed shrimp paste.
