Humba (Bisaya Version)
Humba is a sweet-savory Bisaya pork belly braise with banana blossoms and salted black beans.

Ingredients for Humba (Bisaya Version)
- 4 lbs pork belly, cubed
- 1 Knorr Pork Cube
- 3 cups clear soft drink
- 1 cup water, as needed
- 2 oz banana blossoms
- 2 tbsp salted black beans
- 3 tbsp white vinegar
- 1/2 cup soy sauce
- 1 onion, chopped
- 2 tbsp brown sugar
- 6 cloves garlic, crushed and chopped
- 1/2 tsp crushed peppercorn
How to cook Humba (Bisaya Version)
- 1.Sear pork belly in a wok until brown and fat has rendered. Remove pork and set aside.
- 2.Use about 3 tbsp rendered oil to sauté garlic and onion until the onion softens.
- 3.Return pork, add soy sauce, and sauté for 1 minute. Add vinegar and cook until the liquid evaporates.
- 4.Pour in clear soft drink, cover, and bring to a boil. Add peppercorn and simmer on low for 35 minutes.
- 5.Add banana blossoms, salted black beans, and the pork cube. Cover and cook until pork is tender, adding water as needed.
- 6.Stir in brown sugar and cook 1 minute before serving with warm rice.
