Filipino Style Chicken Noodle Soup
Filipino-style chicken noodle soup is a quick, golden broth with short noodles, shredded chicken, vegetables, and a light cornstarch body.

Ingredients for Filipino Style Chicken Noodle Soup
- 1 cup short noodles, such as vermicelli or angel hair pasta, cut into 1-inch pieces
- 6 cups chicken stock
- 1 cup cooked shredded chicken
- 1 medium carrot, diced
- 1 celery stalk, diced
- 1/2 teaspoon turmeric
- 1 chicken stock cube
- 1 teaspoon cornstarch mixed with 2 tablespoons water
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- Freshly ground black pepper, to taste
- Salt, to taste
- Oil, for sauteing
- Chopped parsley, for garnish
How to cook Filipino Style Chicken Noodle Soup
- 1.Heat a little oil in a medium pot over medium heat. Saute the onion and garlic for about 4 minutes, until soft and fragrant.
- 2.Stir in the carrot and celery, then add the turmeric, salt, and freshly ground black pepper. Cook for 3 minutes to begin softening the vegetables.
- 3.Pour in the chicken stock and add the chicken stock cube. Bring the broth to a gentle boil.
- 4.Add the short noodles and cook for about 6 minutes, or until just tender.
- 5.Stir in the shredded chicken and simmer for 4 minutes to heat it through.
- 6.Add the cornstarch slurry and stir well until the broth slightly thickens.
- 7.Taste and adjust salt and pepper, then remove from heat, ladle into bowls, and garnish with chopped parsley.
