Pan de Coco is soft yeast bread filled with rich, jammy sweetened coconut.

Ingredients for Pan de Coco
¾ cup warm water
2¼ tsp yeast
¾ tsp salt
2 eggs, lightly beaten
¼ cup soft brown sugar
¼ cup room-temperature margarine
3½ cups flour
1 egg, for egg wash
1½ cups desiccated coconut
½ cup coconut milk
¼ cup water
¾ cup dark cane sugar
1 tsp vanilla
2 tsp cornstarch
How to cook Pan de Coco
1.Mix warm water and yeast. Stir in eggs, brown sugar, and margarine, then add flour and salt without kneading.
2.Cover and let dough rise about 1 hour, until doubled.
3.For filling, mix coconut milk, water, dark cane sugar, vanilla, and cornstarch smooth; add coconut and gently simmer until thick like jam. Cool.
4.Deflate dough, divide into lime-sized pieces, flatten, fill each with 1 tablespoon coconut filling, seal, and place seam-side down on a greased tray.
5.Let rise 1 hour in a warm place, brush with egg wash, and bake at 180°C for 15 minutes until golden.
