Roast Beef with cream of mushroom sauce- Filipino Style
This Filipino-style roast beef finishes tender slices in a velvety mushroom cream sauce.

1 1/2 lb chuck roast beef, brisket, or round
3 to 4 tablespoons oil
Water, for slow cooking
2 tablespoons salt
10 peppercorns
1 tablespoon butter
2 cloves garlic
5 large champignon mushrooms, sliced, or 1 small can champignon mushrooms
10 oz cream of mushroom soup
7 fl oz all-purpose cream
4 to 5 tablespoons soy sauce
1 teaspoon ground white pepper
How to cook Roast Beef with cream of mushroom sauce- Filipino Style
1.Heat oil in a skillet over medium-high heat. Sear roast on all sides until golden, about 8 to 10 minutes total.
2.Transfer beef to a pot with salt, peppercorns, and enough water to cover. Boil, then cover and cook on lowest heat for at least 2 hours until tender.
3.Cool slightly and slice beef thinly.
4.Melt butter in a skillet, sauté garlic until soft, then cook mushrooms until lightly browned.
5.Add mushroom soup, all-purpose cream, soy sauce, and white pepper; simmer, thinning with beef broth if needed. Add beef and simmer 10 minutes.
