Sarciadong Isda, Ampalaya at Tausi
Sarciadong Isda, Ampalaya at Tausi combines crisp fried mackerel, bitter melon, black beans, and silky egg sauce.

Ingredients for Sarciadong Isda, Ampalaya at Tausi
- 2 large mackerel, cut into 1 1/2-inch sections
- 1 large ampalaya
- 3 tbsp tausi (fermented black beans)
- 2 cups water
- 1 large tomato, chopped
- 2 eggs, beaten
- Spring onions, chopped
- Fish sauce
- 1 red onion, chopped
- 4 garlic cloves, minced
- Salt
- Freshly ground black pepper
- Oil
How to cook Sarciadong Isda, Ampalaya at Tausi
- 1.Halve ampalaya, scrape out seeds, salt generously, and set aside. Season mackerel with salt and black pepper.
- 2.Heat oil over high heat and fry mackerel until golden on all sides; remove. Rinse, thinly slice, rinse again, and drain ampalaya.
- 3.Leave 2 to 3 tablespoons oil in the pan. Sauté garlic and onion, then cook tomato over low heat until soft.
- 4.Stir-fry ampalaya for 1 minute. Add water, boil uncovered, and add tausi, mashing some beans.
- 5.Return fish and boil on high 3 minutes. Season with fish sauce and pepper, then gently add beaten eggs and fold once partly set.
- 6.Top with spring onions and serve with hot rice.
