Higadillo
Higadillo is a tangy pork and liver stew enriched with lechon sauce and cane vinegar.

Ingredients for Higadillo
- 800 g pork belly, cut into strips
- 350 g pork liver, cut into strips
- 1 cup lechon sauce
- 1 tbsp soy sauce
- 1/4 cup cane vinegar
- 3/4 cup water
- 1 tbsp brown sugar
- 3 bay leaves
- 1 red onion, minced
- 6 cloves garlic, minced
- 1 tsp minced ginger
- Oil
- Salt, to taste
- Freshly ground black pepper, to taste
How to cook Higadillo
- 1.Heat oil in a pot, brown the pork strips, then remove and set aside.
- 2.Sauté garlic, ginger, and onion in the same pot until fragrant.
- 3.Add pork liver and stir-fry for 2 minutes.
- 4.Return pork, add bay leaves, soy sauce, lechon sauce, and water. Bring to a boil, then simmer on low for 30 minutes.
- 5.Add vinegar and sugar; simmer 10 minutes, adding water if needed, until pork is tender.
- 6.Season with salt and black pepper, then serve.
