Special Nilupak
Special Nilupak is a rustic cassava mash served with ube, cheese, coconut, and condensed milk.

Ingredients for Special Nilupak
- 1 kg cassava, peeled and cut into short lengths
- 1 cup condensed milk
- 1/2 cup butter, softened
- Ube flavoring, to taste and desired color
- 1 tsp salt
- Water, for steaming
- 1 cup shredded processed cheese, such as Eden or Cheezee, or mild cheddar
- Margarine, for serving
- Grated fresh coconut, for serving
- Additional condensed milk, for drizzling
How to cook Special Nilupak
- 1.Grease a baking dish with butter or margarine. Steam cassava 35 to 40 minutes until very tender; drain and cool.
- 2.Remove and discard the tough stringy cores. Pound cassava in batches with a mortar and pestle until mashed.
- 3.Mix cassava with condensed milk, butter, and salt until creamy. Divide in half and mix ube flavoring into one portion.
- 4.Pound each portion again briefly for a coarse, rustic texture. Press plain and ube mixtures into opposite halves of the prepared dish.
- 5.Smooth the top, portion, and serve with cheese, coconut, margarine, and extra condensed milk.
