Ingredients for Beef Kaldereta sa Gata with Peanut Butter
- 2 lbs beef chuck, cubed
- 8 ounces tomato sauce
- 1 tomato, chopped
- 2 cups beef broth
- 2 cups coconut milk
- 3 tablespoons peanut butter
- 1 onion, chopped
- 5 cloves garlic, chopped
- 2 potatoes, cubed
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 3 Thai chili peppers, optional
- 3 tablespoons cooking oil
- Salt and ground black pepper, to taste
How to cook Beef Kaldereta sa Gata with Peanut Butter
- 1.Heat the cooking oil in a pot over medium heat.
- 2.Saute the onion, garlic, and chopped tomato until the onion and tomato soften.
- 3.Add the beef and cook, stirring occasionally, until the pieces turn light brown on the outside.
- 4.Pour in the tomato sauce and beef broth, bring to a boil, then cover and cook over low heat until the sauce reduces by about half.
- 5.Add the coconut milk and Thai chili peppers, cover again, and continue simmering until the beef is tender.
- 6.Stir in the peanut butter until fully blended into the sauce.
- 7.Add the cubed potatoes, cover, and cook for 10 minutes, or until starting to soften.
- 8.Add the red and green bell peppers, cover, and cook for 12 minutes more, until the vegetables are tender and the sauce is rich.
- 9.Season with salt and ground black pepper, then serve with warm white rice.
