Spicy Pork Adobo
Spicy Pork Adobo simmers pork butt in a peppery soy-vinegar sauce with dried chilies.

Ingredients for Spicy Pork Adobo
- 1 lb pork butt, diced
- 1/4 cup light soy sauce
- 3 tablespoons oyster sauce
- 1 1/2 teaspoons whole peppercorns
- 3 dried bay leaves
- 3 tablespoons white vinegar
- 2 teaspoons granulated white sugar
- 6 dried red chilies
- 5 garlic cloves, crushed
- 1 cup water
- 3 tablespoons cooking oil
- Salt, to taste
How to cook Spicy Pork Adobo
- 1.Heat oil over medium heat and cook garlic until light brown.
- 2.Add pork and cook 3–5 minutes, until its edges are lightly browned.
- 3.Add soy sauce, oyster sauce, and water; stir and bring to a boil.
- 4.Add chilies, peppercorns, and bay leaves. Cover and simmer 40–45 minutes, until pork is tender.
- 5.Add vinegar and return to a boil.
- 6.Stir in sugar and salt, cook 3 minutes more, and serve.
