Crispy Tenga (Crispy Pig Ears)
Crispy Tenga turns tender, seasoned pig ears into a crunchy pulutan-style snack.

Ingredients for Crispy Tenga (Crispy Pig Ears)
- 1.5 lb pig ears, thoroughly cleaned
- 4 cloves garlic, chopped
- 4 to 6 dried bay leaves
- 1 to 2 tsp whole peppercorns
- 2 tsp salt
- 5 tbsp soy sauce
- 4 tbsp white vinegar
- Water, for boiling
- 4 cups cooking oil
How to cook Crispy Tenga (Crispy Pig Ears)
- 1.Cover pig ears with 5 cups water, bring to a boil, cover, and cook over medium heat for 20 minutes; discard the water.
- 2.Cover ears with fresh water, add garlic, bay leaves, peppercorns, and 1 teaspoon salt, then bring to a boil.
- 3.Add soy sauce and vinegar. Cover and boil over medium heat for 60 minutes, or until tender.
- 4.Cool ears, slice into small pieces, and rub with the remaining salt.
- 5.Heat oil in a deep pot and fry ears until crisp. Drain thoroughly and serve with spicy vinegar.
