Kinilaw na Tuna
Chilled tuna kinilaw is cured in vinegar, citrus, ginger, and chile.

Ingredients for Kinilaw na Tuna
- 2 lb tuna, skinned, deboned, and cubed
- 1 1/2 cups vinegar
- 3 tbsp ginger, minced
- 1 large red onion, minced
- 2 tsp salt
- 1 tsp ground black pepper
- 1/2 cup lemon or calamansi juice
- 1 to 2 tbsp red chilies, chopped
How to cook Kinilaw na Tuna
- 1.Place tuna in a large bowl and pour over 3/4 cup vinegar.
- 2.Stand for 2 minutes, then gently press the tuna with a spoon and drain.
- 3.Rinse the tuna gently with vinegar and drain completely.
- 4.Mix tuna with remaining vinegar, lemon or calamansi juice, ginger, salt, pepper, and chilies.
- 5.Cover and refrigerate for at least 2 hours. Top with red onion before serving.
