Beef Sopas
Beef Sopas is a creamy, hearty macaroni soup enriched with tender beef cheeks and corned beef.

Ingredients for Beef Sopas
- 2 1/2 cups elbow macaroni
- 2 cups beef cheeks, diced
- 250 g canned corned beef
- 6–8 cups beef stock
- 1 large carrot, diced
- 1 large can evaporated milk
- 1 large white onion, finely chopped
- 4 garlic cloves, minced
- 2 tbsp butter
- 1/2 tsp rubbed thyme
- 1/2 tsp rubbed basil
- Salt, to taste
- Freshly ground black pepper, to taste
How to cook Beef Sopas
- 1.Melt butter in a pot and sauté onion and garlic until softened.
- 2.Add beef cheeks and brown them on all sides.
- 3.Add beef stock, carrot, and corned beef; boil, then simmer 40 minutes until beef is tender, adding water if needed.
- 4.Stir in macaroni, basil, and thyme; simmer 15 minutes until pasta is tender.
- 5.Add evaporated milk, bring just to a boil, immediately turn off the heat, and season with salt and pepper.
