Crispy Fried Pompano
Small pompano are scored, seasoned simply, and deep-fried until the skin turns crisp and golden.

Ingredients for Crispy Fried Pompano
- 12 small pompano, gutted
- Sea salt, to taste
- Freshly ground black pepper, to taste
- Oil, enough for deep-frying
How to cook Crispy Fried Pompano
- 1.Score both sides of each pompano, then rub sea salt and freshly ground black pepper over the surface, inside the cavity, and into the cuts.
- 2.Pat the fish very dry with paper towels to reduce splattering and help the skin crisp.
- 3.Heat enough oil for deep-frying in a wok or deep pan to 180°C over medium-high heat.
- 4.Carefully lower the fish into the hot oil without crowding and fry for about 7 minutes per side, or until golden brown, crisp, and cooked through.
- 5.Lift out the fish, drain well on a rack or paper towels, and serve hot.
