Kinulob na Manok
Kinulob na Manok is a banana-leaf-covered chicken pot dish packed with cured meats, potatoes, and calamansi.

Ingredients for Kinulob na Manok
- 1 whole free-range chicken, about 1 to 1.3 kg
- 4 chorizos, sliced
- 6 slices streaky bacon
- 1 cup salami, cubed
- 1 white onion, quartered
- 3 waxy potatoes, cubed
- 4 tomatoes, quartered
- Juice of 3 calamansi
- 1 large bunch spring onions, about 6 to 8 stalks
- 4 tbsp soy sauce
- 4 tbsp olive oil
- 1 tbsp peppercorns
- 4 cups water
- Sea salt
- Banana leaves
- Oil
How to cook Kinulob na Manok
- 1.Fry bacon in a little oil until crisp. Cool, crumble, and reserve the rendered oil.
- 2.Rub chicken generously with salt, including under the skin and cavity; rinse and pat dry.
- 3.Stuff chicken with half the chorizo, bacon, salami, and spring onions. Seal the openings and place in a clay pot or palayok.
- 4.Arrange onion, potatoes, tomatoes, peppercorns, and remaining meats and spring onions around the chicken.
- 5.Add olive oil, soy sauce, calamansi juice, and water. Cover with three banana-leaf layers and a heavy lid; simmer on low for 1 hour.
- 6.Uncover carefully and serve.
