Inaslum
Inaslum is a simple pork-enriched vegetable stew that keeps upo, okra, sitaw, and greens tender-crisp.

Ingredients for Inaslum
- 2 cups bottle gourd (upo), sliced
- 12 okra, halved
- 1 bunch sitaw, cut into 1 1/2-inch pieces
- 1 bunch spinach or kangkong
- 150 grams fatty pork, sliced
- 1 large white onion, sliced
- 4 cloves garlic, minced
- Fish sauce, to taste
- Oil, as needed
- Water, as needed
How to cook Inaslum
- 1.Heat a little oil in a pot over medium heat. Cook pork until its fat renders and the meat browns.
- 2.Add garlic and onion; sauté until fragrant.
- 3.Add sitaw, okra, and upo. Pour in enough water to cover vegetables, bring to a boil, and simmer 5 minutes.
- 4.Add spinach or kangkong and season with fish sauce. Cover, turn off heat, and let residual heat wilt the greens before serving.
