Calamares
Light, crisp squid rings with a quick seasoned coating. Fry in small batches so the calamari stays tender.

Ingredients for Calamares
- 600 g cleaned squid, cut into rings
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 tsp salt
- 1/2 tsp black pepper
- 2 eggs, beaten
- Neutral oil, for deep-frying
- Calamansi wedges, to serve
How to cook Calamares
- 1.Pat the squid rings dry with paper towels. Mix flour, cornstarch, salt, and pepper in a shallow bowl.
- 2.Dip the squid in beaten egg, then coat lightly with the flour mixture. Shake off excess coating.
- 3.Heat about 5 cm of oil to 175°C in a deep pan. Fry the squid in small batches for 2 to 3 minutes until lightly golden; avoid crowding the pan.
- 4.Drain on a rack or paper towels. Serve at once with calamansi wedges and your favorite dip.
