Lechon Pata
Lechon Pata is a tender pork leg roasted until deeply browned with crackling skin.

Ingredients for Lechon Pata
- 1 pig leg, about 4 lb, cleaned
- 5 dried bay leaves
- 1 tbsp whole peppercorns
- 1 bunch lemongrass
- 1 large onion
- 2 tbsp salt
- 1 head garlic, crushed
- Water, enough to cover the leg
- 3/4 cup fresh milk
How to cook Lechon Pata
- 1.Place pork leg in a large pot, cover with water, and add bay leaves, peppercorns, lemongrass, onion, garlic, and salt.
- 2.Bring to a boil, cover, and simmer 60 to 90 minutes until the leg is tender.
- 3.Remove pork, cool, and air-dry for 30 to 45 minutes. Heat oven to 475°F.
- 4.Place leg on a greased baking tray and roast for 45 minutes.
- 5.Brush all over with milk and roast 60 to 90 minutes more, until browned and crisp; broil 10 to 15 minutes for extra crackling.
- 6.Rest briefly, transfer to a platter, and serve with lechon sauce.
