Spanish Style Sardines
Spanish Style Sardines uses milkfish slowly pressure-cooked in olive oil, wine, and pickled vegetables.

Ingredients for Spanish Style Sardines
- 2 milkfish, cut into 1 1/2-inch-thick pieces
- 1 carrot, sliced
- 12 pickled cocktail onions
- 2 large pickled gherkins, sliced
- 4 bay leaves
- Freshly ground black pepper
- 3/4 cup olive oil
- 3/4 cup white wine, plus more if needed
- 1 tbsp fish sauce
- 1 bird's-eye chili
- Salt
How to cook Spanish Style Sardines
- 1.Cover milkfish generously with salt and let stand for at least 1 hour. Rinse under running water.
- 2.Place a rack in the bottom of a pressure cooker to prevent sticking. Pack in fish, chili, bay leaves, carrot, cocktail onions, and gherkins.
- 3.Add white wine, fish sauce, olive oil, and black pepper; ensure the liquid covers the fish, adding more wine if necessary.
- 4.Heat until nearly boiling, reduce heat, seal the cooker, and pressure-cook for 45 minutes.
