Inasal na Liempo
Inasal na Liempo is charcoal-grilled pork belly with a bright vinegar marinade and buttery lemon basting sauce.

Ingredients for Inasal na Liempo
- 1 kilogram pork belly, cut 3/4 inch thick
- 1/2 thumb ginger, peeled
- 6 cloves garlic, peeled
- 4 stalks lemongrass, white parts only
- 1 1/2 cups coconut vinegar
- 1/2 cup lemon juice
- 1/4 cup fish sauce
- 3 tablespoons brown sugar
- 1 teaspoon baking soda
- Freshly ground black pepper, to taste
- 2 teaspoons annatto powder
- 1/2 cup butter
- Juice of 2 lemons
- 1/2 teaspoon salt
How to cook Inasal na Liempo
- 1.Process ginger, garlic, lemongrass, coconut vinegar, 1/2 cup lemon juice, fish sauce, brown sugar, and black pepper into a marinade.
- 2.Massage pork belly with marinade and baking soda in an airtight container. Cover and marinate at least 6 hours.
- 3.Combine annatto powder, butter, juice of 2 lemons, and salt in a saucepan; simmer over low heat for 2 minutes.
- 4.Grill pork belly over charcoal, basting occasionally with butter sauce, until cooked through and charred at the edges.
